Hippopotamus, Bertrand Group is a chain of meat-based restaurants in France.
Founded and owned by Olivier Bertrand, the Bertrand Group began its history in 1997 with the opening of its first restaurant near the Champs Elysées in Paris.
The chain operates around 100 restaurants, and is known for its steakhouse-style dining​.

Hippopotamus has chosen Halton to provide the kitchen ventilation solution for their Opéra Paris restaurant.

For the safe use of heavy duty cooking appliances

With the opening of Hippopotamus Wagram in Paris at the end of 2017, the first ever French-style steakhouse, Hippopotamus has unveiled its new restaurant concept: a new décor and a new method of cooking, with charcoal.
The Hippopotamus Opéra is one of the three largest restaurants in France. In terms of turnover and attendance, they can reach 1000 to 1200 seats a day, at the weekend.
They manage this volume thanks to their charcoal oven. It is therefore very important that the safety factor is under control – for the staff, for the guests and for the neighbourhood.

Heavy duty cooking appliances such as charcoal ovens and charbroilers have always been challenging for the fire safety. They are characterized by high heat loads that generate high temperatures inside the exhaust ductwork.

They also generate a large quantity of FOG (Fat, Oils and Grease) in addition to carbon particles. Using solid fuels, such as charcoal, adds another risk: they emit a significant amount of sparks. The fire risk is a considerable concern for heavy-duty cooking appliances, whatever its type.

The Cold Mist On Demand hoods have been designed to combine high Capture & Containment efficiency on smoke and heat with maximum safety.

Substantial energy savings while improving staff working conditions

In addition to fire safety, reducing the environmental impact of the restaurant was the second most important requirement for Hippopotamus.

M.A.R.V.E.L. is a state-of-the-art controls platform incorporating Demand Controlled Ventilation as a key feature. The controls adjust real time kitchens exhaust airflow rates, depending on the status of the cooking appliances. If only one cooking zone is operating, only the airflow required for that zone would be automatically adjusted. The other zones would continue to operate at a low flow rate. With M.A.R.V.E.L., a zone can be as small as a hood section.

This means impressive energy savings at all levels of the kitchens ventilation, along with a sensible and tangible improvement of chefs’ and their teams comfort.

As the M.A.R.V.E.L. system allows you to measure the activity of cooking appliances, you can also detect conditions of use that may present a fire risk.
With Halton FireWatch, you have a system that identifies when conditions are favorable for a fire BEFORE it ignites! Halton FireWatch monitors hood plenum exhaust temperature. When an anomaly is detected, a local two-stage warning is initiated.

24/7 remote monitoring of the solutions designed by Halton

Controlling maintenance costs and transparency of results is the third challenge for Hippopotamus.

Halton Connect is a state-of-the-art IoT (Internet of Things) platform whose foundation is an advanced and easy-to-use cloud-based portal. It automatically keeps an eye on the operation of the Halton systems, and alerts to any anomaly. Halton Connect web portal provides an overview of Halton systems from any computer or handheld device.

It also provides crucial information to our engineers to provide remote diagnostics of the settings when required, safely. And this is just a glimpse!
