Hippopotamus Paris Opéra – Episode 01: Kitchen Fire Safety

With the opening of Hippopotamus Wagram in Paris at the end of 2017, the first ever French-style steakhouse, Hippopotamus has unveiled its new restaurant concept: a new décor and a new method of cooking, with charcoal.

For the safe use of heavy duty cooking appliances

The Hippopotamus Opéra is one of the three largest restaurants in France. In terms of turnover and attendance, they can reach 1000 to 1200 seats a day, at the weekend.

They manage this volume thanks to their charcoal oven. It is therefore very important that the safety factor is under control – for the staff, for the guests and for the neighbourhood.

Heavy duty cooking appliances such as charcoal ovens and charbroilers have always been challenging for the fire safety. They are characterized by high heat loads that generate high temperatures inside the exhaust ductwork.

They also generate a large quantity of FOG (Fat, Oils and Grease) in addition to carbon particles. Using solid fuels, such as charcoal, adds another risk: they emit a significant amount of sparks. The fire risk is a considerable concern for heavy-duty cooking appliances, whatever its type.
